Carol Ann (Watkins) Shaw was a wonderful wife, sister, mother, grandmother, niece, aunt, and friend whose life and love brightened the world for all who knew her.
A lifelong Texan, Carol was born February 22, 1943, in Hamilton, to her parents Fred Lee and Margaret Ruth (Stevens) Watkins. She passed away on September 9, 2022, at Covenant Medical Center in Lubbock.
Carol grew up in Dallas and its suburbs, where she lived until she moved to Mertzon with her husband Joe W. Shaw, Jr. in 2009. She graduated from Richardson High School in 1961. She attended Arlington State College (now UT-Arlington) until her first marriage and the birth of her son in 1963. She worked as a legal secretary at LTV in Grand Prairie before returning to college to become an attorney. She completed her undergraduate degree at UT-Dallas. She earned her juris doctor degree at Southern Methodist University in 1985 and worked for J.C. Penney Life Insurance and Aegon in Plano.
Carol married Joe, the love of her life, on April 26, 1997. After they retired to West Texas, she was active in her new community, serving on the city council and as mayor of Mertzon.
Carol cared about people and accomplished so much in her life. She enjoyed travelling with her mother to Europe and Hawaii and went camping together. She loved her dogs Brandy, Ginny, Gus and presently Peat and Bandit. She sewed and crocheted beautifully. She earned her pilot’s license and learned to fly fish and hunt.
Carol enjoyed cooking the “best mac and cheese” and other outstanding dishes, which translated into having fun and making happy memories for her family. She participated in Bible studies at Canyon Creek Presbyterian Church in Richardson and the First Methodist Church in Mertzon. She and her husband were also members of the Disciples of Christ Church in Mertzon.
Carol is survived by her husband Joe W. Shaw, Jr. of Mertzon and his family, including daughter Kimberly, son-in-law Kirk Zander and granddaughters Anna and Madeline of Waco, brothers Stephen and Terry Shaw and their families; her sister and brother-in-law Gail and Jim Chandler and their family of Dallas, including Dan Cushing, his children Alexandra and Austin James (A.J.), Sara and Parker Ellis and their child Nathan Ellis, and Katherine and Scott McCandless. She is also survived by her son Michael Lee McCoy of Florida, her aunt Louise Petersen of Dallas and many cousins. She was preceded in death by her parents, uncles Frank and Harry Watkins, and sister-in-law Janet Middlebrook.
Visitation will be on Friday, September 23 from 5-7 p.m. and service will be at 2 p.m. on Saturday, September 24 at Harper Funeral Home, 2606 Southland Blvd. in San Angelo. Burial will take place at the Mertzon Cemetery following the service.
