The Peasant Village will be flaunting their pan seared duck breast with a prickly pear jalapeño cranberry chutney which will be served with toast points. It will have notes of vanilla, cinnamon, and nutmeg, and red prickly juice. "I was honored to be asked to do it, and it's going to be a great event for all those who come and want to try something different and try different foods that are done with prickly pear." - Chef Jason, The Peasant Village Restaurant

The Concho Pearl has been getting state-wide recognition with their creativity in the kitchen lately. They expressed how excited they are to be invited back to the festival this year.

"We really focus on Texas-centric flavors, that for us that has meant a lot of BBQ and smoke, and some of those homespun things like pickling. That's part of what we do here at the Pearl."  - Ashley Turner-Young of The Concho Pearl Icehouse

Last year The Concho Pearl featured a smoked pork tenderloin with a blackberry chutney and a whipped sweet potato, but this year they are going in a different direction. They will be presenting a savory pumpkin cheesecake with dandelion salad with orange pickled gourds, pumpkins, squashes, and cherries.

"It's a showcase for us who are off the beaten path, we're not like Dallas, Austin, or Houston, we are kind of out here like the Lone Rangers so it's a good way to showcase what West Texas has to offer." - Ashley Turner, The Concho Pearl Icehouse

The Prickly Pear Food & Wine Festival will feature local chefs pairing cactus inspired cuisines with award winning Texas wines. There will be over 40 food, beverage, and arts and crafts vendors at the festival; as well as an assortment of entertainment vendors.
